Dear friend,

With the hazy, lazy days of summer sadly drawing to an end, I am sure you are trying to squeeze that last ray of sunshine into our weekends! With schools re-opening and getting back to regular work schedule some of you are also beginning to feel the pressure of coming up with new and easy meal ideas for your family. The good news is, help is close to home!

Do feel free look up my new Fall calendar for cooking classes with Delta Continuing Education. This is probably the last one that the Delta School Board is going to offer for this year – with all their budget restrictions. So, if you have been toying with the idea of taking a cooking class and procrastinating, this is the time to act!!

Private cooking sessions:
If you cannot fit the schedule, or you want to take a class to help you out with quick and easy meal ideas – No problem! Just email me to set up a short 3-hour private class with family/or friends. If this too is not possible, do not hesitate to phone me for a free telephone consultation.

I can offer some good practical tips on tackling meal-time challenges, and will be happy to offer some meal planning which of course implies healthy eating for the whole family, school and office lunches and much more!

My Summer Highlights

I attended two weddings in San Francisco and San Diego. They were both extravagant and lavish, with nothing but the best! Each evening there were parties prior to the actual wedding and accommodation provided for the out-of-towners! Needless to say - the food was fabulous and I was in food heaven!

The setting for my friend's daughter's wedding at the Del Coronado Hotel in San Diego was exquisite and straight out of a picture book – hard to beat such a beautiful setting for the ceremony by the ocean! Appetisers were served on the lawn while a Mariachi Band sang Mexican romantic songs. I enjoyed the re-union with old friends from 30 years ago!

Back at home, things were not that quiet either. I had a houseful of guests from out of town.

On a much simpler note, I enjoyed catering for a couple of local summer weddings. One had the romantic setting of Ladner's Wellington Point. They also chose a totally vegetarian menu (as the couple chose not to kill any animals for their wedding) with a combination of some Mexican appetisers and Indian Vegetarian dishes which everyone seemed to enjoy.

Next, a Bridal shower and Stagette are also being planned using my private cooking classes as a theme.


Grow-Local Fair
Jini winning prizean innovative idea! The Girls' Night Out sessions are becoming a hit as women find it more convenient and cost-effective to invite their girlfriends home for a cooking class where they don't have to do any of the tedious work, but are sure to end up with a sumptuous meal and an entertaining evening for half the price of a restaurant meal! How much better can it get?

The guys get together to watch a game or take the kids to the movies and come home just in time to do the dishes! What a perfect stress-free evening for the ladies!

Last weekend our Earthwise Society in Delta put on a Grow-Local fair featuring local growers and their harvest.

Small plots of land were rented to those who do not have garden space. There were several exhibits, music in the garden, children's activities and among other things I too won first prize for a picnic basket I put on display!

Recipe of the Month:

BBQ PORK TENDERLOIN TERIYAKI

BBQ Pork Tenderloin Teriyaki can be served with Thai Noodles.
1 pork tenderloin

Mix marinade in plastic ziploc bag:

Ingredients:

4 Tbsp. soya sauce
4 Tbsp. sherry
2 Tbsp. fresh ginger, minced
2 Tbsp. oil
2 tsp. sugar
2 cloves garlic, minced

Add pork to bag and refrigerate for 2 hours or overnight or marinate at room temperature for 30 minutes.
Place on greased grill over medium heat for 18-25 minutes. Turn occasionally and baste last 10 minutes with remaining marinade. Remove from grill, tent with foil for 5 minutes. Slice diagonally and serve on a bed of greens.



CABBAGE SALAD
Cabbage Salad With Lime Juice Dressing

Ingredients:

3 large fresh red chillies
2 tbsp. Oil
6 cloves garlic, sliced
6 green shallots, sliced
1/2 cabbage, shredded
1 tbsp. crushed peanuts

Dressing:

2 tbsp. fish sauce
2 tbsp. lime juice
1/2 cup coconut milk

Cut chillies into thin strips. Heat oil in pan, stir-fry chillies, garlic and shallots separately until lightly browned and crisp; drain on absorbent paper.
Add cabbage to pan of boiling water, drain immediately.
Combine cabbage and dressing in bowl, mix well. Serve salad topped with stir-fried chilli mixture and nuts.
Dressing: Combine all ingredients in bowl; mix well.
